Late harvest Sauvignon Blanc is one of Quivira’s rarest offerings; this dessert wine can only be made once or twice every decade. After the majority of 2013’s bounty was harvested, warm afternoon winds kept the remaining unpicked clusters dry and mildew free. These perfect late season conditions allowed gradual, gentle raisining of the fruit that is necessary for late harvest wines. The Sauvignon Blanc was sourced from the iconic and highly decorated Kick Ranch; located on the western side of Spring Mountain, which separates Sonoma and Napa Counties.

A long, almost all day, press cycle followed by wild yeast fermentation in a mix of new and neutral French oak has yielded an intense and unctuous wine with layers of aroma and flavor, along with seamless sugar-acid balance. Manipulations to heat stabilize this wine were intentionally and thoughtfully minimized to preserve the wine’s depth and complexity.

Classic apricot, ripe yellow peach and honey are complimented by a multitude of dried floral and stone fruit accents. On the palate, you’ll find a wonderful balance of acidity and sweetness, distinctive in that it remains refreshing. The finish is clean, crisp and lingering. The great thing about less sweet late harvest wines is that they make wonderful aperitifs with richer pâtés, yet are equally good, maybe better, at the end of the meal.
storing in the cellar
This hand-crafted dessert wine will reward with several years of appropriate cellaring. The late harvest Sauvignon Blanc possesses residual grape protein that exists naturally and is especially sensitive to heat exposure. This protein was purposefully not removed because it would have excessively stripped the wine of natural aromas and flavors. Storage above 80°F could produce a slight haze or precipitate with this particular vintage. Simply store this wine as cool as possible noting the guidelines above, or in the refrigerator. If you do notice a slight haze or precipitate, just settle in an upright position for a few hours before opening.
