Extra Virgin Olive Oil
Olive trees are engrained in our biodiverse landscape lining the valley floor, along the steep hillsides, surrounding our compost pile, and providing shade for guests at our Tasting Room.
We farm four Italian varieties - Pendolino, Maurino, Leccino, and Frantoio. Our olive oil is made from the first press of estate-farmed olive trees on our estate. Each variety represents a different flavor spectrum that adds depth to our Extra Virgin olive oil. We chose to bottle in the dark antique green color to protect the oil from heat and light.
This fab four variety blending gives a nice balance of olive fruitiness, bitterness, and pungency with a whisper of mild black pepper at the finish and a touch of cinnamon from the Leccino olive. Perfect for dressing a salad, drizzling on soup, including in a marinade, or adding to your favorite dish.
