Refuge is our smallest production estate Sauvignon Blanc, coming exclusively from our home ranch Fig Tree Vineyard. Our vision with this wine has always been to showcase the best qualities of our terroir for this varietal through a more opulent and texture-driven expression. Refuge is about layers and mouthfeel.

In 2014 all our barrel lots were night-picked by hand and then gently whole-cluster pressed while still cold first thing in the morning. After settling the juice fermentation was started in stainless tanks where it proceeded at cool temperatures to roughly the half-way point after which transfer to barrels was done. Fermentation completed in barrels and was followed by aging on the lees, sur lie, for 7 months. While the secondary malolactic fermentation was blocked, lees aging here added a creamy richness that perfectly counterpoints the brisk acidity.

Aromatically complex, with hints of fresh stone fruits, citrus and Polynesian flowers and a touch of vanilla beans what follows on the palate is even more engaging. A tangy entry gives way to a round suppleness that is steely at its core, with balanced sweet and sour key lime, and grapefruit flavors. This wine is mouthwatering, but with a richness that speaks to its time aging in oak barrels, leaving a crisp but complex finish. The many facets of Refuge make it a versatile choice when confronted with a food pairing-rich enough to complement a roast chicken, yet its raciness will also pair well with the season’s Dungeness crab and Caesar salad.

Cooperage: Barrel selection is always adjusted to the vintage and this year included both small (60 gallon) and large format (130 gallon) French oak as well as portion of large format Acacia.
